Basically, Billy Ho's dishes are formed with the essence of three elements; Cha Chaan Tengs of Hong Kong, Japan’s Izakaya and the Hanoks of South Korea. In these cultures, traditions in cuisine originate in the desire to take some time out from the bustling daily life to simply enjoy the moment encapsulated in a meal, and Billy Ho put all effort to recreate this nurturing and indulgent atmosphere in the heart of Canggu.
Nowadays, those who are looking to taste some of Billy Ho's fascinating cuisine no longer have to wait till dinnertime to tuck in, as the restaurant has just opened for lunchtime. From midday to 3.00pm, Monday to Sunday come to have a feast and enjoy with Billy Ho’s finest signature dishes; from heaped plates of fresh sashimi, hearty salads like tuna, wakame salad with smoked eggplant, nori, katsuobushi and puffed rice, and larger plates like chicken miso karaage with salted egg yolk sauce, and many more. The menus are a bit different from their dinner selections, but maintain the same taste and quality nonetheless.
Start with selections of sashimi which consist slices of fresh raw fish; tuna, bonito, trevally to white snapper, gorgeously served on ice with an eclectic bamboo tray, then try the Glazed Red Miso Gindara; a portion of boneless fillet of grilled gindara served ‘satay’-style with crunchy texture and a blend of sweet, salty and savory taste. Seafood lovers are up for another treat in form of Flame-Torch Pickled Mackarel; a grilled palate pleaser served with Japanese pickles, Mandarin ponzu and Rayu oil. For a ‘land’ variant, Braised Short-Rib Beef Katsu is a must try. Tender, braised beef slices with crunchy surface, best enjoyed by stuffing it in-between soft brioche buns and a combination of miso jus, Japanese mustard, tonkatsu sauce dip; a scrumptious delicacy on each bites!
Beautifully designed by acclaimed architect Rob Sample, Billy Ho boasts giant black bamboo-decorated high ceiling on its main interior design. The colored scale-like sirap wood behind the bar add some top-level artsy finishing; whilst guest can enjoy their dine sitting on chairs made of local leather; as well the wicker chairs and hand-woven loom one. The menu itself is crafted by Will Meyrick, the man behind some of Bali’s best and most authentic restaurants and one of the most respected maestros of South-East Asian food scene.
