Seated against the backdrop of swaying coconut trees overlooking the mesmerizing Seminyak beach, The Legian is an iconic resort with authentic hospitality and top-class facilities; including The Restaurant dining venue, which just recently has welcomed a renowned French chef, Stephane Gortina, to reshape the wonderful fine-dine menus with his Michelin-grade standards.
As one of Bali’s finest accommodation destination since decades ago, The Legian Seminyak is also known for its exceptional culinary offerings through The Restaurant dining facility. Although the name is simplistic, the menu is anything but; especially now with (two) Michelin-Stars Stephane Gortina in-charge as executive chef.
Focusing on contemporary cuisine with a twist of Asian flavors, Chef Stephane continues the dining venue’s long-running tradition of using local ingredients. “Around 90% (of our ingredients) are local-based” He explains. “Especially the vegetables and fruits, but there are some of our seafood ingredients which were taken from Lombok, some of our meat were also imported from Australia”
During our visit, we were treated by Chef Stephane’s latest degustation masterpiece; the ‘EVOLVE’ set menu, which consists of 6 tantalizing dishes. “’Evolve’ represents my creation, and it is a really personal reflection of my culinary journey” Chef Stephane added. The menu started with a portion of Marinated Mahi-Mahi, Potato Gnocchi and followed by Steamed Barramundi and Roasted Chicken Breast, before amazingly wrapped by Strawberry Composition and Chocolate & Hazelnut Pallet.
Gorgeous presentation aside, Chef Stephane really showcases his caliber in terms of taste; the flavors of Evolve’s meticulous dishes get more delicious on each bite. Everything from the fragrant mahi-mahi combined with sweet and sour taste of green mango and passion fruit sauce, soft barramundi fillet with fennel and shellfish, to the (perfectly) roasted thick chicken breast with chickpeas and olive, was created as an ultimate palate pleaser for local and international guest alike. The chocolate and hazelnut pallet is absolutely recommended; a blend of hazelnut ice cream and soft chocolate pallet (with edible gold flakes on-top) is a ridiculously good dessert to wrap your exquisite feast.
For a more sophisticated, satisfying treat, you can opt for a wine-pairing set which consisted six different type of quality red and white hand-picked by The Legian’s talented sommelier; from Tyrell’s, Bellford Single Vineyard Semillon, Clarendelle Blanc by Haut Brion, Bogle Vineyards Pinot Noir to the sparkling sweet Banfi Rosa Regale Brachetto d’Acqui.
