Da Maria Invites Guest to Dine with Sicily’s Best Indigenous Dishes through Special Menu Event Launch
Italy's largest island of Sicily is a picturesque coastal town with fantastic indigenous dishes, and now Seminyak locals and international visitors alike have chance to taste the delightful flavor of Sicilian fare's first-hand through new menu of Da Maria.
Launched with a very special opening night event on Saturday, June 1st 2019, Da Maria x Sicily marks the first in a new event series for the Seminyak Italian haunt, which will explores the different regions of Italian through the delicacies of each district. “This menu marks the launch of our next series of events at Da Maria, where we will be exploring each region’s delicacies in greater detail” Says Da Maria's Executive Chef Stephen Skelly. “Working our way from the bottom up, we’ll be kicking things off with Sicily, an island famous for its seafood and it’s citrus,”
During the opening night, view exclusive media partners were invited to try the famous Sicilian dishes; from short pasta, citrus to seafood aplenty; such as a plate of lightly seared tuna and steaming bowls of local pasta casarecce. This dish is an ode to Sicily's love affair with both casarecce and pork alike. The bowl of pasta is also garnished with creamy eggplant puree and a portion of tender pork ragu which has been slow-cooked to perfection for three hours. All of this Sicilian goodness is also accompanied by wines local to the region, like Donnafugata Sherazade (red) and Planeta Alastro Bianco (wine).
Tantalizing appetizer and main menus aside, chef Stephen Skelly has also prepared several unforgettable sweet dessert; such as Canolli stuffed with Ricotta and Honeycomb to a layered icy orange Granita with crunchy mint on top for an ultimate palate cleanser. Considering that Sicily district is well-renowned for its fresh citrus, Chef Skelly thoughtfully create a citrus-based sweet treat like this zesty granita, paired with a tangy Prosecco and lemon Semifreddo.

Popularly known as Chef Ton, Thitid Tsassanakajohn pursued his dream at the Culinary Institute of America, and has worked at several prominent restaurants in New York; such as Eleven Madison Park, The Modern, and Jean Georges. Returning to Thailand with a vision to elevate the country's indigenous cuisine, he now runs the kitchens at Le Du and Baan. Le Du is named after the Thai word for “seasons”, which reflects Chef Ton’s focus on traditional flavors and local seasonal ingredients influenced by progressive French techniques. Le Du has been awarded with one Michelin star in 2019 and a rank of 20 in this year’s “Asia’s 50 Best Restaurants”.

Black Perigord Truffle Dinner at Mozaic Restaurant
Mozaic Gastronomique Restaurant is taking a part in a worldwide festivity to celebrate French gastronomy or Gout de France. With more than 3000 top chefs participating in five continents, Chef-Owner Chris Salans has specially created a one-night-only menu that features the creme-de-la-cremeingredient in the haute cuisineworld, black truffles.
Dubbed as ‘Diamonds of Gastronomy’, truffles are a type of fungi that grow underground among the roots of certain trees in certain types of soil. There are white and black truffles, and they are as different as night and day. Black truffle grows with the oak and hazelnut trees in the Perigord region in France, thus giving you a subtle nutty flavor.
This Black Truffle Dinner will be held on March 21, 2019, at Mozaic Gastronomique Restaurant in Ubud. Chef Salans, whose special genius is marrying Indonesian flavors and luxurious imported ingredients with French culinary techniques, has specially prepared a menu that explores the range of black truffles; from amuse bouche to dessert. Each course will incorporate truffles in a rich and surprising way, with pairings of fine Frech Premier Cru and Grand Cru wines. The truffles will be imported from France in March near the end of their season to reassure that they will be mature and full of flavor.
