Spice by Chris Salans Successfully Commenced "Arak and Spice" Mixology Collaboration
On June 7th 2019, Spice by Chris Salans, Bikini and Dewi Sri distillery are happy to announce the second of the series of “Arak and Spice” mixology collaboration event. The three brands/companies are getting together to celebrate the best of what Bali has to offer and share its rich culture in form of new, beautiful and dramatic cocktails all based on the island's traditional liquors: brem and arak.
Brem is a naturally fermented rice wine. Arak is a clear distilled spirit from fermented rice. All brem and arak for this event is produced and supplied by Dewi Sri Company, a local firm founded in Sanur and dedicated to the professional production of rice wines and spirits for more than fifty years.
The second series of "Arak and Spice" collaboration held at Spice by Chris Salans, Ubud, and featured guest celebrity mixologist Arey Barker, the winner of World Class DIAGEO cocktail competition 2014 and head mixologist of Bikini Seminyak. Along with Chef Chris Salans and in-house mixologist Bili Yoga Wirawan, the dynamic trio created an enticing 4-course menu with cocktail pairing based on the aforementioned Arak and Brem.
Mixologist Arey presents his tantalising selections of original cocktails such as Wooden Temple (Whisky, roasted pineapple juice and Brem) and Seen Unseen (Pandan infused Arak, clarified pineapple, vitamin C and coconut-jackfruit liqueur). Chef Chris paired these daring concoctions with his own signature dishes such as Tuna Tataki, Torch Ginger Relish and Tempe Crackers, and Roasted Pork Belly with Fresh Turmeric Dressing and Grilled Pineapple.
The next “Arak and Spice 3.0” event will take place in September 2019 where they will once again collaborate with another celebrity guest mixologist in order to promote the Arak and Brem of Bali. Stay tuned for more info!

Da Maria Invites Guest to Dine with Sicily’s Best Indigenous Dishes through Special Menu Event Launch
Italy's largest island of Sicily is a picturesque coastal town with fantastic indigenous dishes, and now Seminyak locals and international visitors alike have chance to taste the delightful flavor of Sicilian fare's first-hand through new menu of Da Maria.
Launched with a very special opening night event on Saturday, June 1st 2019, Da Maria x Sicily marks the first in a new event series for the Seminyak Italian haunt, which will explores the different regions of Italian through the delicacies of each district. “This menu marks the launch of our next series of events at Da Maria, where we will be exploring each region’s delicacies in greater detail” Says Da Maria's Executive Chef Stephen Skelly. “Working our way from the bottom up, we’ll be kicking things off with Sicily, an island famous for its seafood and it’s citrus,”
During the opening night, view exclusive media partners were invited to try the famous Sicilian dishes; from short pasta, citrus to seafood aplenty; such as a plate of lightly seared tuna and steaming bowls of local pasta casarecce. This dish is an ode to Sicily's love affair with both casarecce and pork alike. The bowl of pasta is also garnished with creamy eggplant puree and a portion of tender pork ragu which has been slow-cooked to perfection for three hours. All of this Sicilian goodness is also accompanied by wines local to the region, like Donnafugata Sherazade (red) and Planeta Alastro Bianco (wine).
Tantalizing appetizer and main menus aside, chef Stephen Skelly has also prepared several unforgettable sweet dessert; such as Canolli stuffed with Ricotta and Honeycomb to a layered icy orange Granita with crunchy mint on top for an ultimate palate cleanser. Considering that Sicily district is well-renowned for its fresh citrus, Chef Skelly thoughtfully create a citrus-based sweet treat like this zesty granita, paired with a tangy Prosecco and lemon Semifreddo.

The 1st in a series of gastronomic events, this rare and unique collaboration features two Michelin-starred restaurants and celebrated winners of this year’s Asia’s 50 Best Restaurants renowned for their cuisine style, philosophy and craftsmanship.
Popularly known as Chef Ton, Thitid Tsassanakajohn pursued his dream at the Culinary Institute of America, and has worked at several prominent restaurants in New York; such as Eleven Madison Park, The Modern, and Jean Georges. Returning to Thailand with a vision to elevate the country's indigenous cuisine, he now runs the kitchens at Le Du and Baan. Le Du is named after the Thai word for “seasons”, which reflects Chef Ton’s focus on traditional flavors and local seasonal ingredients influenced by progressive French techniques. Le Du has been awarded with one Michelin star in 2019 and a rank of 20 in this year’s “Asia’s 50 Best Restaurants”.

Mozaic Restaurant Gastronomique Embrace Its Upcoming 18Th Anniversary Celebration
Celebrating the 18th anniversary of its distinguished Mozaic Restaurant Gastronomique in Ubud, Bali, Chris Salan Group is planning a special gala dinner event with enticing concept.
Since established back in 2001, Mozaic has been internationally renowned for its pioneering concept of combining ingredients and flavors from the Indonesian archipelago with modern French techniques of preparation and presentation. This culinary approach has now become a movement all across Indonesia, and Founder Chef Chris Salan has become an important mentor for young talented local chefs as well as an international ambassador for Indonesian cuisine.
To commemorate their special anniversary day on June 28th, Chris Salan and his merry team will present the guest with “Dinner Spectacle” — an theatrical evening of wine, dine & live entertainment by international choreographer and performer Jasmine Obuko and her performing group 'Kita Poleng'. The evening will begin with an Anniversary Champagne & Cocktail Party with canapés, live entertainment, a cake-cutting ceremony and a short address by Chris Salan. More than 100 F&B industry and media influencers will be invited to attend the cocktail party.
The main dinner will consist of a 6-course tasting menu with optional wine pairings. Chef Chris Salans himself will man the kitchen and cook variety of ensemble dishes taken from Mozaic’s most favorite menus over the past 18 years; such as Smoked Escolar Carpaccio with Lemo Lime Dressing, and Rack of Lamb, Cardamom Gastrique and Fresh Curry Leaves served with Mozaic’s signature potato purée. Fine wine pairings from Mozaic’s superb wine collection will also be available, and especially designed for the evening.
The price including cocktail party and dinner is Rp 1,850,000++ per person, with optional wine pairing at 990,000++ per person. Seating is for 60 persons only, so reservations are strongly advised for those who wish to get immersed in this spectacular soiree.

Komaneka Host Two Prominent International Chef for ‘Trading Spaces’ 2019
Komaneka is proud to announce that they will host two renowned names in culinary industry for "Trading Spaces" event this year. Chef Eelke Plasmeijer (Restaurant Locavore, Ubud) and Joris Bijdendijk (RIJKS® Amsterdam, Netherlands) will exchange their continental expertise, restaurant and lives.
From May 23-26th 2019, both chefs will simultaneously move their entire restaurant to the other side of the world. Chef Joris and his team are- flying to Bali; where they will only have a few days to transform Restaurant Locavore into a familiar habitat before challenging themselves to create a menu using local ingredients they have been able to source, whilst chef Eelke will be doing the same in RIJKS®, Amsterdam.
The rules of Trading Spaces are simple: Each chef travels to their new, temporary environment with no ingredients, recipes and with only a few helping hands. They will soak up the local culture before eventually preparing their signature menu at their new restaurant. Guests can anticipate an unforgettable culinary adventure.
