Two of COMO Hotel and Resort properties in Bali, COMO Uma Canggu and COMO Uma Ubud are confirmed to join the first Bali Hotel Association (BHA) Sustainable Food Festival 2021.

This festival, which will be held from September 27th to October 16th allows COMO Uma Canggu and Uma Cucina at COMO Uma Ubud to showcase the innovative work they have been doing through this time while shifting to a more sustainable way. Both resort’s food and beverage outlets are preparing a special two-course set menu featuring Indonesian food at COMO Beach Club and Italian-twist treats at Uma Cucina to be savored by the guest during this period.

Uma Cucina's Menu To Be Featured In BHA Sustainable Food Festival

The menus featured in Sustainable Food Festival must adhere to the following key area; ingredients used must be 100% sourced from Indonesia, encourage a minimum of 75% organically grown items, respect fair trade principles, i.e. fully female run enterprises, all seafood produces to be certified sustainable and poultry to be free range. BHA’s Sustainable Food Festival also aims at reducing waste output to as close to zero as possible, by encouraging waste reduction activities such as composting and waste separation to facilitate recycling. These initiatives are intended to set a benchmark for the future, by being implemented across all operational areas beyond the festival period.

COMO Beach Club, the oceanside setting at COMO Uma Canggu offers a modern take on the traditional ‘surf shack’, which sets it apart from the other bustling beachside venues in Canggu – a refined yet laid-back favourite among surfers, foodies and travellers alike. Fresh, regional ingredients drive their simple, modern approach in the kitchen, with an authentic wood-fired grill. Uma Cucina, an Italian-inspired restaurant and lounge at COMO Uma Ubud offers an informal and convivial setting in outdoor terraces and indoor dining area that reflects the homely ‘kitchen’ spirit behind its name. House specialities include handmade pastas, woodfired pizzas and breads, as well as classic Italian gelatos and granitas.

For this event, the culinary team of COMO Beach Club has prepared a delicious two-course sharing set menu of traditional Indonesian delicacies from Ikan Kerapu Goreng (crispy fried whole grouper, fried garlic, ginger and shallot with spicy sweet and sour sauce) to Dadar Gulung (Pandan crepes with caramelized coconut and banana with coconut sorbet) as the sweet ending. While with its Italian specialties, Uma Cucina of COMO Uma Ubud offers two-course set menu featuring the tantalising Tagliatelle Ai Gamberi (hand-cut tagliatelle, prawns, zucchini, cherry tomatoes and parsley) and Tartlet (lemon ricotta with vincotto glazed strawberries).
