Hellobali visits Spice by Chris Salan’s latest branch in Seminyak to figure out what the fuzz is all about.

After the massive success of the first and second Spice by Chris Salans in Ubud and Sanur, it doesn’t come as a surprise that the third gastrobar with the all-day dining concept is opening in Seminyak. Located just twenty metres from the entrance of Jalan Batubelig, the third branch offers the exciting culinary inventions and funky cocktails by the indomitable Chris Salans.

As the founder of Mozaic, Salans famously applied French cooking technique to Indonesian ingredients. The result of this marriage of two food cultures catapulted him to celebrity status, won him numerous awards and made him a leading culinary figure in Indonesia and beyond. It is not surprising that Spice by Chris Salans took off immediately. After all, there are not many people who can say no to a casual and affordable dining experience.

The Seminyak branch is spacious oasis during the sweltering afternoon when I come visit. I choose to sit on the bar where the actions are. Upcycled bottles are hanging over my head and brilliantly used as lighting centerpieces. Clever mixologists and talented young chefs are working side by side to prepare the orders from behind the bar. In between, they managed to give me a drink recommendation. Curry Crushed is a cooling, slighty bitter and aromatic affair – exactly like how I like my cocktail.

 

I start my lunch with pan seared cubes of Tuna Tataki with Sambal Kecicang. A thin and deliciously crispy tempe crackers are my spoon to deliver the tiny morsels of timely cooked tuna into my mouth. A standing ovation also has to be given to the flavourful Beef Rendang cromesquis with spicy sambal hijau and fragrant coconut rice. It is a true tribute to the legendary Padang dish, translated into a whole new format. The meat balls are spicy, punchy and gorgeously plated. Despite being small bites, those two starters are definitely not small in flavour.

I close my lunch with a glass of deconstructed Kolak. It is made of a glass of heavenly palm sugar biscuit, banana chips, coconut sorbet, and espuma – definitely a treat that I will come to revisit soon. Sit at the bar so you wouldn’t miss all the fun.
